If you’re unfamiliar with them, Heavenly Hunks sort of sounds like a calendar filled with shirtless firemen or something, so just to clear things up quickly they are NOT that. Instead, they’re bite-sized chunks of chewy, oaty, chocolate chip goodness — decidedly addictive and a perfect snack or treat. They definitely live up to their heavenly moniker! You can find bagged versions at the grocery store or bulk-sized bags at Costco, but those have some oils and flours that don’t work with my dietary restrictions. So I recreated them into a version that I can enjoy guilt-free and this — Heavenly Hunks Copycat Recipe— was born.

Sprouted Rolled Oats

Oats work for some people and are tough for others. The thing that changes oats for me is not only using gluten-free oats of course, but using gluten-free sprouted oats. Sprouted oats are much easier for many stomachs to digest, including mine. You can likely find some version at your grocery store, definitely at a Whole Foods-type store, and on Amazon. My favorite one is a certified gluten-free brand called One Degree and you can find them here.

Substitutes for Honey

The combination of honey and coconut sugar works really well here. You could use maple syrup instead, but it will change the flavor profile as a part of these bites is their honey-ish flavor. I like using a very light-colored creamy honey. My favorite one is this one. Plus, you’re also getting sweetness from the chocolate chips and they are key here! I’ve been loving a Guittard version sweetened with coconut sugar, but my kiddos prefer the Enjoy Life brand. You can choose either one or use what you have already at home!

Easy Sweet Snack

Warming the coconut oil and honey together on the stove is an important step here to get those ingredients fully mixed with all the others. But aside from that step, these come together in minutes in the food processor. You also don’t HAVE to pulse them and if you’d prefer the oats remain whole, you can just mix up the ingredients in a bowl and then press into the pan before you freeze.

Freezer Cookies

No matter how you cut them — you can make squares, roll them into energy balls or make them granola bar-sized — these gems freeze beautifully. I recommend cutting these or making them into their final shape before you freeze them though. They’ll store in a stasher bag easily in the freezer for up to a few months. I love them straight out of the freezer and find the cool nibbles make the treat last longer. But if you don’t want them cold, you can pop one on a plate and warm it in the microwave for 8 seconds. Or, just leave it on the counter for a few minutes and let it come up to temperature before you enjoy.

Ingredients

  • 1/3 cup honey
  • 1/2 cup coconut oil
  • 2 1/3 cups rolled oats divided (my stomach tolerates the sprouted oats from One Degree best. They’re much easier to digest)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup arrowroot powder
  • 1 tablespoon coconut flour
  • ¼ cup coconut sugar
  • 1/4 teaspoon Himalayan salt
  • 1/2 cup chocolate chips or chopped chocolate (I love Guittard keto chips but my kids prefer Enjoy Life)

Instructions

  1. Warm the coconut oil and honey in a saucepan over low heat, until melted. Set aside to cool to room temperature.
  2. In a small food processor, grind 1/3 cup of the oats into a fine flour.
  3. Add the remaining oats, shredded coconut, arrowroot, coconut flour, coconut sugar, and salt. Pulse 3 to 5 times to combine. Pour in the melted coconut oil and honey mixture, and pulse a few times to combine. Stir in the chocolate chips with a rubber spatula.
  4. Using a rubber spatula, press the dough into a parchment lined loaf pan and freeze it until set, about 1 hour. Remove the parchment and cut the loaf into 1.5- inch squares.
  5. Alternatively, this mixture can be rolled into energy bites.
